Lapsang Souchong: Smoke-Dried Black Tea
WHAT IS IT?
Lapsang Souchong is a Chinese black tea smoke-dried over pine. It adds a smoke flavor to your dishes (good as a natural flavor extract). You do not taste the black tea very much except for the tannins.
HOW TO USE IT
Lapsang souchong is perfect to add a clean smoke flavour - clean as opposed to hot smoking to impart flavour, which would impact the existing flavours more.
Flavor Notes: strong woodsy notes, smokey.
Flavor Pairings: rich sauces, semi-soft to semi-hard cheeses, strong chocolate.
Use it in rich pasta sauces, add a BBQ flavor to your dish, make a dipping sauce.
Lapsang Souchong is an inexpensive black tea because the Chinese producers and distributors don't think it's a quality product - in fact it's not consumed much in China.

Find it in independent tea stores or online.
For a stronger - very strong -smoke flavor you can use a Taiwanese tea called Tarry Souchong.
