||8 Ice Cream Sandwiches
16 thin pieces of 'nana bread
6 cups / 900g vegan vanilla ice cream
Preheat a grill pan to high heat. Cut the ends of the pieces of banana bread so they are perfectly rectangular. Grill them for 3 minutes on each side, careful it will get softer. Let cool completely on cooling grid.
Let the ice cream thaw for 5-10 minutes at room temperature. Make sure it is spreadable but not too soft before you begin to make your sandwiches. Meanwhile, lay 8 of the banana bread slices down in a pan close to each other. When ice cream is thawed a bit, spread it on top of the 'nana bread slices. Square the exposed side, and top the rest of the slices, making sure to align each one with the bottom slice. Cover with plastic wrap and place in the freezer for a 1 hour.
Take out, score the sandwiches aligned with the slices, wrap each one individually and freeze for later or eat the now.
For a walnut version, mix in toasted walnuts in the vanilla ice cream before spreading. Or try it with other ice cream flavors like maple, chocolate or even fruit sorbet.
