At Chloé Robi, we believe that every ingredient matters—especially the fats we use. That’s why we exclusively use virgin organic coconut oil in our cookies, avoiding industrially processed seed oils that are often high in inflammatory polyunsaturated fatty acids (PUFAs).

Why We Avoid Processed Seed Oils

Many conventional cookies contain oils like canola, soybean, sunflower, or corn oil. These oils undergo industrial processing, often involving chemical solvents, bleaching, and high-heat refining, which can lead to the formation of oxidized lipids and trans fats—both of which contribute to systemic inflammation.

The issue lies in their high omega-6 fatty acid content. While omega-6 is an essential fatty acid, excess intake—especially in the form of linoleic acid—can lead to an imbalance in the omega-6 to omega-3 ratio. This imbalance is linked to:

  • Increased oxidative stress: Linoleic acid is highly susceptible to lipid peroxidation, which generates free radicals that damage cells.

  • Chronic inflammation: Excess omega-6 stimulates the production of inflammatory eicosanoids, compounds that can contribute to conditions like cardiovascular disease, arthritis, and metabolic disorders.

  • Mitochondrial dysfunction: Some studies suggest that excessive consumption of oxidized PUFAs can impair mitochondrial efficiency, reducing cellular energy production.

Why We Use Virgin Organic Coconut Oil

In contrast, our choice of virgin organic coconut oil provides a stable, minimally processed fat source that is naturally rich in medium-chain triglycerides (MCTs), which:

  • Support efficient energy metabolism without burdening the liver.

  • Are resistant to oxidation due to their high saturated fat content, meaning they don’t degrade into harmful byproducts like PUFAs do.

  • Have been studied for their potential anti-inflammatory and antimicrobial properties.

We also prioritize sustainability in the sourcing of our virgin organic coconut oil. Unlike industrial palm oil or mass-produced vegetable oils, our coconut oil is extracted using a cold-press method, which:

  • Preserves the oil’s natural nutrients without the need for chemical solvents or excessive heat.
